Gases protection for fruits and nuts

By Lilla Németh, Messer Hungarogáz

Ungarn | The food manufacturer Nobilis specializes in the processing of nuts and dried fruits. The company recently started using Modified Atmosphere Packaging (MAP) to package its products. Nobilis exports 70% of its products, notably to Japan and the USA. MAP packaging safeguards product quality even during long-distance transport. The gas supply system and the food gases they use originate from Messer. A gentle drying process preserves vitamins and minerals along with the aroma and flavor of the fresh fruit.

More efficient mixer cooling

By Gina Foster, Messer Americas

USA | For customers in the North American food industry, Messer offers the Advanced Cryogenic Control System (“Chill Perfect”) for precise and efficient mixer cooling. The control system makes it possible to tailor the cryogen injection precisely to the requirements of individual batches or mixtures and set the desired temperature exactly. That means shorter cycle times, better efficiency and even greater food safety. The system works with hygienically designed Kryojector™ injectors that feed liquid nitrogen or carbon dioxide into the mixer from below. The extremely cold liquid cools the product directly without diluting it. Kryojector injectors can also be retrofitted into existing mixers.

Messer installed the supply system that provides the medicinal gases there.

Start-up of CO₂ unit in Keyes

By Gina Foster, Messer Americas

USA | Messer’s new CO₂ unit in Keyes, in northern California, has been producing 450 tons of carbon dioxide per day since May of this year. Most of the gas is supplied to customers from the food and beverage industry, where it is used for cooling or freezing as well as producing carbonated beverages. Another major customer segment is the electronics industry. The unit strengthens the presence of Messer in the region and reinforces supply reliability.

Nitrogen protects rose cake’s floral accents

By the Editorial Team

China | The Happymiss bakery chain uses liquid nitrogen from Messer to freeze its rose cakes. The dessert is a specialty of Yunnan province and contains a filling made of edible rose petals. They originate from a local rose variety that is specially cultivated for this purpose. The pastry’s fans extol its delicate sweetness and its floral notes, and it’s also purportedly good for the complexion. The rose cake is also becoming more and more popular outside of Yunnan and is even exported to South Korea and southeast Asia. Happymiss freezes the filled dough with liquid nitrogen and delivers it frozen. The cake is then baked fresh in the stores. The extremely cold gas provides rapid cooling while allowing only very small ice crystals to form, thereby enabling the pastry to retain its flavor and texture. Moreover, the process raises production efficiency and lowers costs.
